Amaranth is also known as Rajgira, Ramdana.
Amaranth provides a good source of protein, fibre, iron and Vitamin B.
The protein in amaranth is more digestible than other seeds and grains and has been compared to the digestibility of milk protein. Amaranth is great in porridge or polenta style recipes. It can also be popped like popcorn!
Millets are generally rain fed crops grown in dry lands thus assuming greater importance for regenerative agriculture and food security; they serve as a good source for proteins, micronutrients and phytochemicals.
Please consume millets under appropriate supervision; small quantities generally go a long way.
